中央畜產會於89年1月1日正式揭牌運作，是農業界唯一經立法通過的財團法人，其中央主管機關為行政院農業委員會。中央畜產會運作模式，與日本依「畜產品價格安定等有關法律」成立之「獨立行政法人農畜產業振興機構」類似，均依法訂定任務，建立產銷調節機制，達到事前預警、穩定產銷之目標，是政府與畜牧產業團體間重要的溝通橋樑。
