周氏蝦捲創始人周進根先生表示，早在五十年前他的父親就從事魚丸類小吃，周進根接手後就在觀音亭旁賣起自助餐，而蝦捲便是其中一道菜，由於蝦仁料好實在，風味又獨特，許多食客專點蝦捲吃，所以便改為專賣蝦捲。
